Excellent Choice To Try Open Fermenting

I brew it with wb-06 and open fermenter during primary . Love the banana / clove flavor. Adding a little honey sounds interesting to me.

Great Hefe

This was my first time brewing in 5 years, I only brewed with the Mr.Beer kit before. I figured I may as well go big and try an all grain recipe for my first brew. I did the BIAB method, was very simple and easy with amazing results. I fermented for close to 4 weeks, 2 weeks conditioning in the bottle and I couldnt wait any longer, just cracked one open after 2 days cold crashing in the fridge. HUGE white head with tight bubbles with great retention. Medium golden body like honey. Perfect level of carbonation, not too fizzy. I was afraid it was going to be very dry but it has a surprising amount of body to it, it is hazy, like any wheat beer but it smelled very astringent in the fermentor, I left it for a 4th week and it has all seemed to clear up, remember to be patient and give your home brew time to mature. It came in at 5.3% Abv and I am not getting any of the banana flavours, maybe because I used the WB-06? Sorry for the long rant, I am just very excited!
