Soak the inside of your new wine or beer barrel with a mixture of 1 lb Barolkleen per 5 gallons of hot water for 3 days.
Then, flush 3 times with hot water, and rinse with a solution of 2 oz sodium sulphite and 1 oz citric acid mixed with 2 gallons of water.
Finally, rinse with plenty of water.
This will remove excess tannin from the wood.
Barolkleen can also be used for cleaning old barrels, using the same method.
