What is the purpose of a false bottom and why do I need one?

A false bottom is a type of screening that helps in separating the sweet sugary wort from the mash/grains above it. False bottoms are typically a round piece of metal with small holes only large enough for liquid to pass through. It sits at the bottom of the mash tun (in this case, the kettle), and is held up approximately an inch above the bottom of the kettle.

During the sparge, the grains will form a filter bed on top of the false bottom, only allowing the wort to filter through. This keeps your spigot from getting clogged with grain when you run off the sweet wort into your boil kettle.
