Also known as Gypsum, Calcium Sulphate adds permanent hardness to soft brewing water. For advanced homebrewers that use distilled, or RO water, add some gypsum back into the water to give it some hardness. Gypsum can also be used to lower the pH of water. Great addition to extra hoppy beers.

add a few grams to your water and you will get a higher level of hop character. Consult a water salts calculator to work out how much is best for your water supply. I have very soft water and add 5-10g to my hoppy beers.
