Fining gelatin is a heat soluble powder. Clears beer or wine by causing the particles to coagulate and settle. Composed of high molecular weight mass proteins that carry a big positive charge. Can be prepared by mixing in warm water and adding during transfer or pump-over. Solutions must be maintained at a temperature of 95-104F (35-40C) when added. Can take up to 2 weeks to clear a beer or wine.

Fining Gelatin (2 oz)

Use 1/2 tsp for five gallons of beer. Dissolve the fining gelatin into 1/4-1/2 cup of hot water, then add to beer. Wait a few days and rack off. Gelatin can also reduce astringency by removing tannins.
