Cream Ale


An ale version of the classic American lager style. Pale straw in colour, this style of beer is light and crisp. A smooth mouthfeel and higher carbonation leads to a thirst quenching finish. Faint malt notes can be found in the aroma, as well as sweet, corn-like aromas. A low bitterness beer and moderate maltiness, neither the hops or malt will prevail in the taste. Subtle fruity esters can be detected dependent on fermentation temperature.

Good summer beer for friends May 28, 2015

This beer turned out great. I was a little concerned at the flaked corn flavour during fermentation (there was a bit of an off flavour in the first three weeks), but as the yeast did its thing, the flavour dissapeared, and now it lends a smooth creamy profile to the finished beer. I can't leave well enough alone, so I added an oz of citra hops to the fermentor for five days. Great for summer drinking, I might go with an earthier hop for dry hopping next time, maybe saaz.

A very good light body summer blonde type ale. Brews quite fast, at 75 f. which is my garage temp now. Perfect for summer brewing and drinking. Can be longer than normal sparging as the flaked corn seems to be quite dense, but wasn't really a problem to wait another 20 minutes. Of course the nitrogen pak hops and fresh 2 row were top notch quality, and the safale us 05  yeast is perfect for this. Great recipe.

I made this beer for my non-adventerous domestic light beer drinking friends.  The homebrew skeptics drained the keg in one weekend!!! The clarity and light straw colour of this beer was amazing.  I used the WLP080 Cream Ale yeast.  Perfect light beer for hot summer days! Get used to hearing, I can't believe this is homebrew!
