Control Your Flavour January 11, 2015

Put the chips in a pot and cover in water, boil for 10 minutes to sanitize and make an oak tea.  Strain out the chips and slowly add the tea to you bottling bucket or keg until desired level of oak is reached.

I recommend you not age with these for longer than a week to 1.5 weeks. If you want more vanilla note, add more during racking. if you let it age for longer than 1.5 weeks you will end up having your malty and vanilla notes be overpowered by oak flavour.

Great in barley wines September 6, 2013

I added 2 oz of these oak chips to 5 gal. of an American Barley wine (~11%). I let it age in the kegerator and sampled along the way. After about 2 weeks the vanilla and oak flavors came through and I removed the chips. Makes for a great addition to this beer!
