Briess' Red Wheat Flakes can be used in place of wheat malt when brewing wheat beer. These flakes produce a different flavour compared to standard wheat malt. It is excellent for use when brewing Belgian Wit Beers. Use up to 40% as a cereal adjunct in the total grist.  Use 0.5-1.0% to a standard brew to increase foam stability and head retention.

Briess Red Wheat Flakes are a versatile brewing adjunct that is quite popular for brewing Witbiers and Hefeweizens. Since the flakes are gelatinized, they can be added directly into the mash without prior processing, providing better filtration when compared to wheat malt. In terms of flavour, Red Wheat Flakes impart a slightly more grain-forward character than typical wheat grains, which can be very convenient for amplifying the grain character in wheat-based beer styles. Red Wheat Flakes can also be used for improving head retention and colour adjustment in ordinary beers.
