White Labs WLP565 Belgian Saison I Yeast
White Labs WLP565 Belgian Saison I Yeast

White Labs WLP565 Belgian Saison I Yeast -- From Wallonia, this is a classic Saison yeast strain producing earthy, peppery, and spicy notes. Also slightly sweet. When brewing a higher gravity saison, brewers may wish to dry/finish the brew with an alternate yeast added after 75% fermentation completion.

Note to brewers: This strain tends to stall out in fermentation and then restart as long as two weeks later. Make sure the wort is well-oxygenated and allow the temperature to free rise in order to ensure complete fermentation. Some brewers add WLP001 to finish.

We highly recommend adding a Metallic Insulated Yeast Mailer when buying liquid yeast. The mailer keeps your yeast cold for an additional 24 hours. It can safely hold up to 4 yeast and ice packs. We only guarantee yeast that is shipped using these mailers.

Hard to work with August 4, 2013
Reviewer: Marc Lapierre from Kanata, ON Canada
Definitely do your research on this yeast prior to buying! Expect it to stop working half way through and go to sleep for a few weeks. This can be confusing if you're not expecting it.

Classic fruity/dry saison yeast. July 30, 2013
Reviewer: Jeffery from Victoria, BC Canada
Yes, this yeast is difficult to work with. Often takes more than 2 weeks to ferment, and definitely benefits from high temperatures (pushing 35C works well). But the rewards are worth the effort. Very diverse fruity esters and a nice dry finish. Can be combined with other yeasts to finish more quickly.
