Flaked Corn (Maize) lightens the colour and body of a beer, but maintains alcohol content. Use in small quantities to add depth of character to lighter ales and lagers. Neutral flavour in small amounts. Brings a moderate sweetness at higher percentages.
Traditionally used for brewing Light American Lagers and Cream Ales, Flaked Corn is an excellent brewing ingredient that can enhance the complexity of any beer. It is often regarded as a lighting agent in beers, which helps to achieve very light colour in commercial lagers. However, when used correctly and within reasonable proportions, Flaked Corn can add a pleasant creamy texture and flavour to the beer, which is a welcome trait in certain beer styles. The best results are obtained when the rate doesn't exceed 30% of the total grain bill. Flaked Corn is a very interesting ingredient that can be used in a very broad range of styles, from Light Lagers to Stouts and Porters.
