This New England Ale Yeast is part of Lallemand's new LalBrew premium series and is perfect for hazy IPAs. As an American East Coast Ale Yeast it will bring out and accentuate all the tropical, fruity flavours and aromas traditionally associated with New England IPAs.

As with other Lallemand dried yeast strains, this yeast is ready-to-use immediately. It is a strain of Saccharomyces cerevisiae, and has been specially selected for its ability to keep hop flavours and aromas prominent while also providing fruity notes.

The fermentation and aromatic profiles are suitable for producing East Coast style ales. New England Ale Yeast is best used at a fermentation temperature range between 15-22°C. Fermentation usually takes up to 7 days depending on the recipe and conditions.

  • Fermentation can be completed in 4 days above 17°C (68°F).
  • Medium to high attenuation and medium alcohol tolerance.
  • Fermentation rate, fermentation time and degree of attenuation depend on inoculation density, yeast handling, fermentation temperature and nutritional quality of wort.
  • Medium flocculation rate; settling can be promoted by cooling and by using fining agents and isinglass.
  • Complex aroma and flavours may include tropical fruit, red apple, green apple, alcoholic, sweet and fruity.
