It combines the ease of a bottle with the innovation of PurePitch, providing a modular pouch with a cap and a consistent cell concentration intended to pitch at 7.5 million cells/ml; a commercially recommended pitching rate to ensure a foolproof fermentation.

Increased Fermentation Speed
As demand for higher pitch rates have been steadily rising, White Labs has optimized the cell count of PurePitch Next Generation to ensure brewers see consistent, clean, and speedy fermentations. The consistent pitch rates help shorten lag times resulting in quicker gravity drops.

Increased Viability
Through process improvements and laboratory analysis, White Labs monitors the glycogen content of the yeast cells to give them more energy when starting a fermentation. PurePitch Next Generation features a breathable proprietary dual-layer film that is designed to allow for a more effective off-gassing that reduces product inflation and delivers higher viability and shelf life of the yeast.

White Labs WLP500 Monastery Ale Yeast (formerly known as Trappist Ale Yeast) produces distinctive fruitiness and plum notes. An excellent yeast for higher gravity beers including Belgian ales, dubbels, and tripels. This yeast is sourced from one of the few remaining Trappist breweries in the world.

Yeast Statistics:
  • Attenuation: 75 - 80%
  • Flocculation: Low to Medium
  • Optimum Fermentation Temperature: 65 - 72°F (Lower temperatures under 65°F will result in less fruity and more earthy beers)
  • Alcohol Tolerance: High
