Potassium Metabisulphite is a widely used winemaking agent. It is an antioxidant and bactericide that is very effective with killing wild yeast and bacteria. Adding this to your must is an excellent way to clear to way for your yeast to do its job.
- Dissolve sulphite in warm water before adding
- To sanitize use 2 ounce per 1 gallon of water
- To kill wild yeast use 1/4 teaspoon per 6 gallons of must
